Uddeholm 15N20 - as single steel for kitchen knife

Hey guys,

From some time I think about to make some kitchen knives just from a single steel 15N20 1.1mm thin.

Will this stell give me a good kitchen knives?
And what about getting a hamon on that steel?

Great for a knife maybe a bit thin though. No hamon.
 
Heat treat it to Rc62. Its great for thin tough blades. Wear resistance is better than expected. :thumbup:

0.005" behind the edge and 15dps works quite well.
 
I have tried to make a hamon with thin 15N20 but I was not successful. They definitely make a nice kitchen knife though.
 
Surprisingly good.
It's also somewhat more user friendly for heat treating than 1095 (the other steel you can get in thin sheets from Aldo)- you have just a bit more time to complete the quench, though with good technique and the right oil it's kind of a non-issue.
 
You can get a hamon but it won't be anything special, you can do a simple hamon design but you have to apply the clay thick and etch very slow several times and make sure to polish it good in between each etch. Over all 15n20 is a pretty good steel and has fine grain, so it would make a nice kitchen knife. Mine 15n20 is about 1/16th " and it still works well for me so one sure you will make out fine with 1.1mm
 
The stock Aldo had smelted will hamon reasonable well. The uddenholm stock won't so much. The 0.130" stock from Aldo does hamon.

Yes they do! The one you sent me gets used in the kitchen a lot. It holds an edge well, cut's awesome:thumbup:

15n20 is about as under rated as it gets for kitchen knife steels, with the right heat treat the edge holding can be tremendous. It is very tough as well.
