UHC Steel Roselli

I'm considering buying a Roselli UHC Hunting Knife or the UHC Carpenters Knife.The knife will be used as a general purpose knife on my hunting trips which are mainly for deer or bear in Canada and the U.S.I'd like to try a knife with a blade made out of the UHC Steel but I'm concerned it may be too brittle.Can any users of knives using this type of steel give me any feedback on how it performs,and anyone who may own both a Hunter and a Carpenter's Knife tell me which you prefer?
 
Three things to know about UHC Rosellis. 1) They get sharp. Really sharp. 2) Great edge-holding, unless you've got a faulty specimen. 3) Brittle. If you use these knives strictly for small knife tasks - cutting, slicing - they should work fine. But if you start prying bones or wood with them or chopping, you're likely to see chipping.
