Among all schools of cutlery in the world that I like the design for kitchen knives is the French. In my opinion the Sabatier Knife is the best Chef Knife existing (I respect different opinions!). I think the Sabatier is versatile, safe, comfortable and still pretty. It's a very technical project! I've done many of these knives and I confess that I love doing this. I finished this knife that is certainly one of the best I've ever done.
The total length is 13 3/8 inches. The blade measures 8 7/8 inches long, 2 inches wide and only .086 inch thick (2.2 mm). I had been careful to weigh the knife barely managed to make it lighter than this one. Only 213 grams. The material chosen for the handle also took into account the lightness: stabilized maple burl (by Burlsource - excellent quality!!!).

I agree with you on the Sabatier design. It is one of my favorites as well. That is a very awesome blade.
 
Really great knife. I love everything about it.

I'm a big fan of Kitchen blades myself, almost 70 percent of the knives that leave my shop are headed for kitchen duty.

They probably see the most use of all custom knives :).

Hi Guys. I'm glad you enjoyed it. I started doing the laddered W recently and fell in love with this pattern. Previously I was only using the method Filicietti. This knife is a very functional and I like enough to produce a knife that will be used.
