I have a knife with a badly uneven bevel. Im going to try and thin the edge down hoping to even it out some. Does having an uneven bevel hurt performance ?

Depends on how and why its uneven. If its uneven due to the sharpening angle being different then yes it can have affect on cutting performance. If its uneven because the blade grind is uneven then not so much because the grind of the edge is not actually uneven but the blade grind itself is.

Check grind lines to see how well they match up, this will help you find how well centered you blade is and let you know if its the blade or bevel that's uneven.
