I found this guy on Instagram that was making Kitchen Knives. One of the OG knife influencers (DaddyOEDC) had one made by him and I really liked the look. He only made 8 inch knives at the time so I purchased the 210 mm version you see below. I used it for a while and liked it but I really wanted a 10 inch version and he finally caved and made me one. The maker is Jaime Gonzalez (@jaime34266) on Instagram. The dude does great work and I have been very happy with these. I'm moving them because I typically use a knife in the kitchen now that has some sentimental value - my 270 mm gyuto that I got on a trip to NOLA, my 240 mm that my wife gave me for an anniversary, or my CCK that I was given for Father's Day one year. These knives are just too great to be sitting around in a drawer like they have been for the last few months.
Both have W2 steel heat treated to 62 - 63 HRC and micarta handles. By the time he made the 10 inch for me he changed his design some so he didn't have as much tang sticking out of the handle. Both are comfortable. The 8 inch is ground THIN - it's a true laser. The 10 inch has a thinly ground tip but has more heft closer to the spine for those tougher cuts (sweet potatoes are no match!).
Both knives have been used and sharpened once on my Venev water stone. These are excellent US made work horses. Pics below show some patina - bar keepers friend will clean that right up if it's not your cup of tea. I dig patina on carbon steel though! You should see my CCK.
