But of course it can be used as a general kitchen knife too. The grind has a slight convex to a very sharp edge, there is bit of a the belly on the edge to will keep knuckles off the cutting board and the clip on the leading edge, though not sharpened, helps with penetration into the food.
Forged from 52100 high carbon steel
Heat treated to Rc 60-62
Flat grind wlth a slight convex
Stabilized figured maple handle with black Micarta spacers, The handle is dishwater safe but please never in the dishwasher (never submit any knife to that corrosive environment)
Overall length: 9 1/2 inches
Blade: 5 inches
Depth at the forefinger: 1 7/8 inches
