Venison, "It's What's for Dinner"

Spent the last day of PA Firearms Season on a new property I'm hunting, overlooking a thousand acres or so of standing corn. My buddy was down below me watching a washout in the crops, near a thin treeline. He had missed twice the previous Saturday at that exact spot, so he wanted to stay their the whole day.

This doe and two others popped out of the thick swampy area bordering the corn just 80 yards from me. They were stepped into the corn and holed up in a sparse area about 60 yards from my stand. I hit her quartering slightly towards me with my CVA inline muzzle loader. The 270 gn Platinum Power Belt with 100 gns. of Pyrodex went through both lungs and the top of the liver. She only ran 50-60 yards collapsing in the corn.

I field dressed her with one of my first forged knives.

Man I miss eating venison. It's all i ate for years up there. We have some down here but they are small and far and few between. I leave them alone.
I eat lamb instead.

I always soaked my venison in buttermilk for a few hours. My Granny's trick to tone the flavor down a little bit.
 
I've been making deer burgers for three days now, man that's some good stuff, great job brother!!!!!!!!!!
 
Thanks guys....I ate some loins last night.

Sliced them into half inch sized medallions and fried them in olive oil, Texas Pete's hot sauce, red wine (homemade from my neighbor), salt & pepper.

Covered them with homemade cream of asparagus......went down like butta!!!
 
I recently marinated some back straps in a cocktails sauce / thousand island mixture overnight. Then wrapped them in bacon and grilled them with charcoal. They were excellent.
 
Nice hunting! Dipbait, never heard of that marinade, the only dressing I have ever used is Italian or Greek, I'll try yours sometime.
