Generally when I've seen homemade batteries like this, they've involved 2 leads of different metals. Unless the guy in the video used one copper wire and one zinc wire or something like that, I don't see how the charges would separate enough between the 2 wires to create electric potential. Still going with shenanigans

Yeah, shenanigans makes a lot more sense. There must be a battery hidden inside the potato in the "edit." Some magician...
I'm no chemist, but salt? From what little I know, it's about as stable as it gets.
