I have two questions.

What is the blue tape you use in the 4th video to polish the edge?

Do you notice an edge angle variation when reprofiling?

Not really noticeable if you pay attention and check the edges bringing it up to that stone level. Have to spend the time to make sure the edges are even before changing stones, saves a lot of headaches taking your time.

I did this much faster than I normally would.

The Tape is the 2000 grit.

I was not talking about the bevels symetry but about a variation on one bevel from tip to ricasso. It's a thing i've noticed on pictures. Of course longer the blade more you notice it. I can't decide myself to buy an EdgePro cause of that though it looks like a well made system.

When that happens it's because the blade grind gets thicker towards the tip of the knife, not because of the system.

On blades that the grind is even the edge bevel will be also.

Do you leave your stones soaking in water all the time when not in use?

Yes I do.

Yes from 30 to 40.

I've never used an EdgePro but it seems to me that as soon you draw aside tangentially, (to the left or to the right), the stone from the point where you have ruled the angle, you increase the radius and thus you decrease the sharpening angle.

On the edge pro, I think that if you move the part of the edge that you are grinding towards the center of the "table", you won't get much of an angle change.

I think that's why Ben Dale recommends grinding only on the "table" and not beyond it. You just move the part of the knife edge that you want to grind onto the "table".

No, the grind the thicker towards the tip. ;)

Compared to this one were it doesn't get thicker.

Jim, even on the monitor, I can see myself in the bevels of that custom Demko. :D

Did you take it up to the 6000 grit tape?

One question, I noticed when you were using the edge pro you were using a back and forth motion. Are you in contact with the blade and the stone in both directions?

Oh and I think I am sold on the edge pro...seems like just get it and be done with it!

Yes the stones are in contact in both directions, part of the reason it works so fast. :)
 
Well, I took the plunge and picked up one of these, :thumbup:
while I've always been a free hand sharpener, and will still do
so when the need presents itself, this does an admirable job!
Still have to work on going out to the tip more but that will
come with a little more practice, but very nice, mirror polished
edge that push cuts through material easily.
