Ahhhh... photographing the mystical hamons. You did great on your lightbox shots. I see you used a form of dark overhead masking to draw it out.
Looking at hamons into a harsh light will ALWAYS reveal the most tantalizing patterns, but it's simply not attainable in a professional tent, due to the lighting dynamics. How well I know.
So, you're right: those handheld shots are always scrumptious. And there is almost always some glare present to make it pop.
Good job. Most important is how well the knife is received. I'd say you have a winner!
