Hey guys and gals,
This wa handle gyuto is hand ground from Aldo's 52100 high carbon steel.
The blade was flat ground then convexed behind the edge to reduce food stickage.
The blade has a scotchbrite finish.
The blade features a distal taper.
The blade has a rounded and spine and choil for increased comfort.
The dovetail joint wa handle has an African blackwood ferrule joined to bocote and is hand finished in a octagonal shape lightly tapered to towards the front.
The edge was taken to a 6000 wetstone then stropped.


HRC: 63-64
Blade thickness at spine: .1in/2.5mm in. and tapers to .02in/.5mm
Thickness behind edge: .011in/.3mm
Tip to handle: 8.37in/212mm
Handle: 5.5in/140mm
Handle width: 1in/25.5mm in back and tapers to .89in/22.5mm in front
Handle height: 1in/25.7mm in back and tapers to .89in/22.7mm in front
Overall: 13.87in/352mm
Weight: 180 g. (6.3oz)
