So I have been having a lot of trouble finding a whittling knife that is juuuuuuust right. My original post on this can be found here

So.. What do I want? I want a form of congress knife with multiple utilities as far as the blades. I want half stops. I want a hard steel. Maybe something near a 62 RC? I want a knife that I can sharpen to split a hair that won't need to be resharpened ever few hours of work (using whet/honing stones and strops). I won't be simply buying basswood and such for my projects, but foraging for my own wood. So I need a whittling knife that can really go the distance, and take care of even medium and harder woods.
I plan to be making a large amount of walking sticks and staves. I also would like the knife to have class to it.

These are some examples of knives that have come close for me, but a 1095 carbon steel just seems a little soft. (I may be wrong)
Again, I'm looking for a STRONG wood working and whittling knife that will last the ages
