Kasumi Yanagi custom made for me by Sinichi Watanabe
330mm/13" single bevel blade - Hitachi white steel
Burnt chestnut handle - right handed
Hand-sharpened to #8000 polish (Togidashi sharpening)

It has been used exactly once to cut about a dozen slices of maguro. It remains as ridiculously sharp as it was out of the box, but the high carbon white steel now has a light patina on its surface. It would polish off easily enough, but I wouldn't bother if you plan to use the knife.
