I like Watco Brand Danish oil best. I have never had problems with it getting gummy or blushing in cold damp conditions.
It might just be because that is what I am familiar with having used it regularly over the last 10+ years with both natural and stabilized woods.
For wax I use Minwax brand Paste Finishing wax. Some people try using car wax but that dries with a light color haze that makes the pores in the wood show as light color dots.
Like Warren said, several coats with the oil. Not just a couple.
When I use Danish Oil on my woodworking projects I will apply a liberal coat and let it sit for a while (warmer weather shorter time) till it just starts to feel barely tacky. Then I wipe off all excess with a soft cloth.
I let that sit a couple hours and then repeat until I like how it looks. I usually let that dry a couple days before applying paste wax and then hand buff like polishing a pair of leather shoes.

Results will be different. Probably not as good.
I've been using Tru-oil for the last six months, and now I've put it to the test. One of my carbon (1095) knives spent a full week submerged under eight inches of dirty water in a clogged up sink. The blade was totally rusted, but the handle looked almost as good as the day it went under. Now, that's a water test! Plus, it applies easily and cures quickly. Definitely my fav.
