Waterstone maintenance question

Hmmm...

I've got myself some leftover ceramic tile 12x12, but the backsides have this raised checkerboard pattern. They're not flat. I have other left over natural stone tiles from a bathroom job, but theyre not completely flat and have pores all throughout.

Should I be looking for a completely flat backside ceramic tile?

Alternatively, I saw a $3 cheap combination stone from Harbor Freight. I'm always worried about the quality of the stuff harbor freight sells, but it seems something like this would work?

I think the one I used was a raised checkered pattern on the backside. It seemed to work well because the divots in the checker pattern collected most of the stone material. I don't think it will matter as long as it is fairly flat.
