I use the King 1000/6000 stone. It is good for polishing a blade. It is also very soft, & a poor sharpening stroke will cut into it. A good stone for learning.
It strikes me that for the kind of sharpness you describe, a worn in 1000 grit diamond stone would be perfect. But a double sided Norton & a double sided King will give you a lot to play with & learn from.
