Oil or grease will totally kill the colour of anodising. You are obviously seeing reflected light and the depth of that oxide layer or anodised layer gives the colour spectrum you see with heat coloured or anodised Ti. Oil is just getting in the way and stopping you seeing what is there. Just clean it with soap or solvent to get the colours back. When the layer is actually worn away then you really are not seeing what was there.
