I personally do not care if the edge is not there, I like to sharpen then knifes my self to put the edge I like on them. I am sure Busse and kin do not know what every buyer likes, so they are walking the middle ground on that one
As far as shaving sharp, try a straight razor to get a feel what shaving sharp is, I doubt any knife will ever be shaving sharp.
