Today I have another Western Style Chef Knife for sale! The blade is 6 1/4” and the overall length is 11 1/2 inches.
The knife is a full flat with a slightly convex, razor sharp edge. Flats are hand sanded to 400 grit. The knife is made from 3/32” Nitro-V stainless steel and was heat treated and tempered in a digital controlled Evenheat knife kiln, plate and air quenched to achieve 62 RW which is perfect for this knife.
Handles are a beautiful stabilized Maple with Black vulcanized paper and Toxic Green G-10 liners and a deco pin. The handle, which is hand sanded to 800 grit, is gently contoured and the knife has a very stunning appearance in hand. The color combination of the liners are really set off by the Maple wood.
