Today I have another Western Style Chef Knife for sale! The blade is 6 1/2” and the overall length is 11 1/4 inches.
The knife is a full flat with a slightly convex, razor sharp edge. The knife is made from 3/32” Nitro-V stainless steel and was heat treated and tempered in a digital controlled Evenheat knife kiln, plate and air quenched to achieve 61/62 RC which is perfect for this knife.
Handles are a beautiful stabilized Canarywood and Orange Creamsickle Acrylic and Orange G-10 pins. The handle, which is hand sanded to 800 grit, is gently contoured and the knife has a very stunning appearance in hand. Knife spine is rounded for comfort.
