What are all these little kits/packs I see?

There's going to be 2 different sizes available. The larger of the 2 will be able to fit the HEST and the ESEE 3 inside. The smaller one will fit the Izula.

do you guys wear these pouches when hiking, or when you get to camp?

I think it just depends on the kit. Some are survival kits that guys carry around with them daily either on them or in their vehicle. Some are kits that they take with them out in the field as a back up should they get themselves into a sticky situation. It really just depends on the person and how they build their kit.
 
If you mean the small packs mounted on sheaths there are some available on the ESEE site. They hold an altoid tin which is usually used for survival items.Like this one on my HEST.

It's the Maxpedition 3 x 5 Notebook Cover, I had never even bought it to make a kit around it. I got it for free in a large order I had placed and after playing around with it realized that it makes for a really good pouch for a survival kit. It perfectly fits an Altoids sized tin, Leatherman, SAK, many other tools and it's pretty cheaply priced.

I carry my little altoids tin kit ever day because it's so small.
Many of the kits you tend to see posted about are tiny ones like that, the idea being that you can always have at least a few useful things in your pocket. Be it the unexpected emergency around town, or out in the field if you get separated from your pack somehow.

If i go for real hike, I would bring something a bit more substantial. The same if I go very far from home in my car.
On that larger end of the spectrum heres my maxpedition waist pack...which is light, and not a full camping setup...but it would enable me to rough it for a night or two without extreme discomfort.

Can you please tell me more about this pouch? It obviously makes a great psk pouch.

That's a Tactical Tailor E/E Pouch. The amount of gear you can fit inside that pouch is simply amazing and it's just the right size to fit inside a cargo pocket in a pair of shorts or BDU's. They also make a vertical version that's set up with all the pockets length wise, but I think this is the better of the 2. The new RAT Pack Pouches that are coming out soon are going to be pretty similar to this, just with a different pocket set-up inside. This pouch is also big enough to fit an Izula with it's sheath inside.
