What are some good carbon slipjoints?

I also carry the Moremaker 5301 stockman as my EDC. Outstanding knife. This 1095 steel takes a razor sharp, and I mean hair shaving sharp edge with little effort.

Another brand that offers carbon steel with natural handles is Eye Brand.

I do have an Eye Brand, some are made by Boker it looks like. Mine is a called a locking Sod Buster Jr though it has a clip blade. A neat knife, but very poorly contructed. Gaps in scales, blade rubbing the inside bottom... BUT, I have blued the blue and buffed it down and it is really neat looking. It is also one of my sharpest knives. I really like the grind. I have spent hours on my MM(Camilus) trying to get a good edge.

I almost bought one of their Canoes, but I'm sticking with other brands.
 
OK, back to American brands. But I have found that the fit and finish of Eye Brand's other patterns is much better than that found in the sodbusters.

Here are my favorite three, although only one is plain carbons steel:

CASE must be an obvious suspect, but Great Eastern offer a kind of Stockman- Cuban in carbon. Bit big though.
