I assume they work well for skinning/game processing... does the blade shape lend itself to other tasks well? I always admire the aesthetics of them (especially some of the fiddlebacks) but wonder about their practicality.

I sometimes use a Nessmuk for whittling and shaping sticks. It's a bit more of a slicer than a chopper, but it really is a very useful blade. Once you get it in hand, you can feel how easy it is to choke up for fine work or bear down with the thumb on the spine for tougher stuff.
