So I have been searching for info about touching and handling copper daily. It has been difficult to find any info. I know that when ingested copper is toxic but what about everyday handling and use? Can someone please chime in and give some info about the ins and outs of using copper for scales.

From Material Safety Data Sheet (MSDS) for Copper

"In contact with skin:
May discolour skin but has no known toxic effects. Imbedded particles can cause inflammation of nerves. Not expected to be absorbed.
"

The "bad" is that copper is a pain to work because it gets really hot really fast when grinding.

You might find it better to use a copper alloy that is a red color but more wear resistant .Of course these alloys are not hardenable by HT so cold worked will be better [ full hard, for example ] BTW copper is an essential nutient in small amounts but toxic in large amounts ! Copper also has anti-bacterial action.

As a plumber and making lots of dishes and metal art from copper I can tell you that having touched copper daily for years you won't have a problem.

A couple more points. It's anti-microbial so the surface of your knife will be clean. Also if you really really gripped and twisted your knife you might discolor your hands. But not likely.

My EDC pen is copper. I use it daily and it doesn't discolor my finger or anything.

It gets hot so fast. You always have to use fresh sharp belts. That's the bad.
