I've always liked finding covers of songs I already like. I've found some that I think are pretty amazing but don't seem to be too well known. Two that have really impressed me are Evanescence's cover of Thoughtless by Korn and Tool's cover of No Quarter by Led Zeppelin. They almost redefine the songs.
