voted for elk because i don't have one :D. i like stag, but sometimes they look horrible
 
my favorite material right now is natural micarta (with a lot of black speckles and imperfections). Mr. Keith Johnson said he called that "pumpkin pie". love it.
 
Since it rains a lot here, I like handle materials that will stand up to water and usually stay away from wood, if I can avoid it. Even though I bought another folding hunter with a Wood Handle in the last two weeks. It's a weakness I tell ya. Too many nice knives out there to carry and too little time. :D

jigged bone or bone stag first come to mind but like what is listed above and more too.
