What are your favorite knife movies

Kick Ass Hit Girl (Chloe Moretz-stole every scene she was in!) was killer with the Balisongs.

+1 For The Hunted (the 1995 Christopher Lambert one) Yoshio Harada stole every scene he was in too.
 
Look for the excellent recent south korean thriller "The Man from Nowhere". It features one of the scariest knife fights I've ever seen in a movie.
 
True! Executed in FMA style... Not too much melodrama either. :)

South Korean genre cinema is amongst the most energetic and interesting of the moment. Also, the scripts don't take prisoners. I discovered them with "Memories of Murder" and "Oldboy", both were outstanding, I then eagerly started hunting for other gems.
In the case of "The man from nowhere", the knife fight is edge of the seat stuff.

I now notice that you can watch the scene on YouTube, it is best to start watching at 7:00 (action more than a bit over the top then), and the man to man fight starts at around 10:40. This is not suitable viewing at work. Also, you should really watch the whole movie in my opinion.

Yeah, the scripts are interestingly different from western ones.
Have you seen "I saw the Devil"? Definitely a one not to watch with missus though! Lots of edged weapon action, screwdrivers and stuff. And of course -a very disturbed individuals... :)
 
Hunted is awsome cronicals of ridick is a dirty pleasure the man in the iron mask has some good espada e daga by john malcovich gangs of new york the pub scene in centurion and beleave it or not the dark night there is more just can't think of them

Also, Inglourious Basterds had some pretty brutal knife scenes in it along with some sweet looking knives.

U already mentioned some pretty nice movies with good knife scenes (and I'm sure there are alot more hidden, especially in southeast asian fight movies).
But to me, the man/knife relationship in "The hunted" beats any other thing I have seen so far.
