What are your preferred blade finishes ?

Mirror finish all the way, on any blade... just for the ease of cleaning (and noticing any corrosion starting), especially on a folder or a fixed EDC. In addition, a non stainless blade can show amazing resistance to surface corrosion if it is mirror polished. For true stainless steel blades, a very fine satin finish is still OK. Rough ground or rough forged blades may look good but they are out of question for me.

3M Scotchbrite... I use my knives.

But can't resist a nice patina either!

I hate bead blast too

I used to prefer a rough acid stonewash or bead blasted finish but I've since had issues with corrosion spots turning up.

A polished stonewash finish is probably my favorite but high grit satin has done very well for corrosion resistance.

Pretty much like anything that isn't painted. Prefer a satin, stonewashed, or high polished surface.
