I have a Cold Steel Bush Ranger made in Japan. Nice big full flat ground blade that I once chopped down a
6" thick tree with. Discontinued around 2000.

My beloved Benchmade Mini AFCK. This was my sencond one. First having the 812 with the round hole and ATS-34 steel. Gave that one away to get the newer 814 with oval hole and 154CM steel. Discontinued in the early 2000's.

Microtech Mini Socom. Sharpest knife I own. Got one mine with a stonewashed finish on closeout at NGK in 2003. It uses a locking liner made from 154CM. Discontinued in the early 2000's.

MOD Hornet. What a stout little knife. Jim Rays (Microtech) own knife making company Masters Of Defense. Many of the same features you'd find on MT's. Can be found as a cheaper model today imported by Blackhawk as the Hornet II. Discontinued (in original form) in the late 90's.

I have a few that I don't seem to see much about nowadays.
1) Microtech Manual CMTX
2) REKAT Sifu
3) Cuda Maxx 5.5
4) Benchmade 45 x 2

What are my rarest knives?

Well, duh, around here, that was once the sharp ones.

Seriously, I guess the Buck Custom Shop 110's, like my flaming koa wood scaled/nickel silver bolstered/teardrop Damascus example. For more commonly available, I have a pair of ZT-0551's and BM 630 Skirmish's that would rate as favorite and somewhat rare.

Stainz

Keith Coleman large camp knife, custom made from when he first started making knives back in the early 80's. My Flarehty folders which seem to be as rare as hens teeth. keepem sharp

I have an early 1900's Russell Green River Works knife. 5 1/2 blade with a 5 3/8 handle with a wooden ' cord' wrapped handle. Someone at a knife show told me it was used for sheep
shearing....I have my doubts tho. Just sits in a drawer unused.

Rarest is probably my CPM M4 Military, only because it was a sprint run.

Also have a Spyderco large Wayne Goddard, plain edge. And you almost never see those around. Discontinued for awhile.

Rarest is a Benchmade 950-1001, 40 of 50. I carried at work yesterday, it's a fantastic knife with my favorite steel.

Rarest knife from a production company is my Boker Leo IV, 4 steels and 600 layer damascus, tapered tang, corm of rosewood handles, 600 layer inlays, and 925 Sterling silver guard and pins. There were only 250 made and were originally not slated to be sold in the US. MSRP was $1800.

I have a 50th anniversary soldier sak that I've been carrying around in my pocket the past few months. Seems to be my go to knife at the moment.

Do "one-off" customs count?

That was my first thought.

My second thought was the knives that I modified. Very rare in deed, but perhaps not very desirable to others...then again, many very rare knives are not particularly desirable to all but a few people.

An old kabar skinning almost sharpfinger style knife.... I haven't been able to find one like it anywhere. and an old school cold steel tanto with the brass pommel and hilt, and an S60v Non-blem Blur 1 of 15.

Either a Benchmade ares with maroon scales and a g10 backspacer or my AFCK in M2. Actually it might my REKAT Carnivore cub only because that knife has seen some serious use and abuse yet locks up nice and tight...

first that comes to mind are 2atc khukuris from cold steel in stainless that would be difficult/expensive to replace.
