What blade grind would send the carrots flying?

Why put this in Wilderness & Survival Skills when we have a Kitchen Cutlery & Tools forum now?
 
This thread is funny. I test my kitchen knives on carrots every time. If they disks fly rather than lay down then the grind is too thick.

So, my answer to the original question is this: A crappy grind send carrots flying. Get a thinner ground knife.
 
full flat ground 2 inch tall 3/32 thick spine or less ground to less then .010 then sharpened to no less then 15 degree total (thinner angle then that and you run into problems )
even the JP single bevels are not ground to less an angle cause of edge issues
