Just a suggestion for once you get it clean, it's easier to get animal (I hope you're talking about animal ) guts off the knife when they're still wet. Just carry around a hanky or a hunk of old T-shirt around in your pocket when you're out using the knife and wipe it off while the guts are fresh, then clean it with water later or 3 in 1 oil later on.
Hydrogen peroxide is an oxidizer, and can cause rust.
Use hot, soapy water and a stiff brush. Dry, and spritz it with WD 40 to remove traces of moisture.
