What is the correct name for a "rivet" that screws together? Think a Corby-type fastener with a much smaller head and screw diameter. I would like to try them on a knife-related project. Hard to find them if you can't name them... Can be either Torx or hex.

I think you are looking for pivot screws, most used for making folders but will work for knife handles.
