I've only been doing short 1-3 miles hikes, more of the 1 mile variety lately. I only carry a folder, my Gossman PSK and a multi folder, like my SAK or Remington scout. Lunch prep is about it though.
 
Me it depends on season.

Summer I usually just carry a SAK and a fixed blade. Sometimes just the SAK. Switching from the SAK to the Izula though. I love this thing.

Winter and bad weather I add a GB mini or CS Trail Hawk to the mix. Depends on if I want a weapon or if I want a carver.

In between weather I'll sometimes add a saw to the summer line up.
 
I carry the same kit for a day hike as I would for a three day trip.
Down here a trip to the gas station could become a three day affair if there is a flash flood, mudslide or earthquake.
 
All of my ventures lately have been day hikes, so nothing too extreme, but here it is.

Both are bocote scales on green river blanks; Dadley and Ripper respectively. I made these, and the sheaths for meself about 5 years back. They are the blades that converted me to carbon steel. I like these, plus a Swensaw and/or and axe/chopper.

Seriously, it all depends on where I'm going and for how long. I always have a knife, usually a SAK or Griptilian. If it's a dayhike I'll probably take the BA Bushcrafter or a puukko along. On a longer trip I'll add a larger knife as well and maybe a saw or small axe. Anytime the hike is planned I have several methods of fire starting, a 1st Aid Kit and space blanket at a minimum. I never carry a multi-tool.
 
i carry a BK11 daily...to work, to play...doesnt matter...i never leave home w/out it. I keep a CS Kukri in my truck if needed, and i generally have a pocket knife of some kind w/ me as well...lately it has been a spyderco delica w/ partially serrated edge (that i found...i hate the teeth, but it works for me and has a WICKED point). If no spyderco, then i'll do a RAT folder or a 1979 case trapper.
