What do you use in the kitchen?

Our favorite and most used is a 3in. paring knife I made.It has an ATS-34 blade with Micarta slabs. It holds a good edge and has never stained.I also like to use some of my pocket knives.Axis,AFCK, Delica. My favorite was my 440V Military which I no longer have : 0 ( Oh yeah we also have some cheap West- Bend stuff.
