What do you use your folders for?

You almost never hear anything bad about Opinels, so if those float your boat, go for it. Personally, I love good carbon steel like these have, but since you specifically mentioned cutting cheese and apples, just do be aware that these are going to take a little more maintenance than a stainless blade would. Just something to be aware of.

Some other thoughts .....

Buck is putting out some nice single-blade pocketknives these days with a bargain price tag.* This Nobleman (model 327) is 3 3/4" long closed and has a liner lock. Goes for about $20.

Or, I can wholeheartedly second the recommendation to try a Victorinox SAK. (BTW, they do make a (nearly) single-blade folder.

You might also check out a Robin from Spyderco's new "Byrd" line, which you can get for under $20.*

Also in the "why not give 'em a try" price range are Kabar's line of Dozier folders. You can find these on line all day long in the <$25 price range.

hwyhobo, if you check with a Victronox dealer they usually carry spare toothpicks for sale, I've bought about a half dozen of them over the years.

If you're lloking for a singe-blade SAK, check out the Victorinox Solo. It comes in alox handles or plastic handles
 
I carry my *folders* to polish the insides of my pockets and to give me something to play with when I'm bored.
 
Sharpening pencils. Killing centipedes and scorpions.
Making stick horses, marshmallow roasters, and other utensils and toys. Making or modifying bandages.. Trimming candles and wicks, and fishing line.
Field dressing game animals. Making all the components of a spear, sling, or slingshot.
Extracting nails from tires.. Digging meat from a pecan.
To Cut seatbelt to extract trapped driver, cut shoelaces to extract trapped foot.
To Remove clothing from injury in First Aid. To write by scribing on something.
For Personal defense against man or beast. Cutting hose for snorkel or breathing tube.
 
I'm using my slippies 90% for food preparation, peeling apples, cutting bread, cheese....

I think you don't need to reason WHY you had to buy a Laguiole, everybody who will held it in his hands will know why!
Go for a quality one in carbon steel, like Fontenille Pataud, Forge de Laguiole, Laguiole De l'Artisan.
I have my Fontenille Pataud reserved for weekends and other special ocasions.
For me, there is no better gentlemen slippie!
 
Pretty well what everyone else has said for urban use:) I also have a couple of beaters (Ka-Bar/Dozier, Bryd Crow, Endura 3 with a serration missing) that get used in the "ugly stuff" - scraping paint/plaster, labels, cutting drywall and insulation, hose, opening bags of plaster, cutting lino when I'm too lazy to go across the room for the correct tool. This was the stuff I was doing when I was doing some renovation work on some rental properties. They've had a month's vacation, so very shortly, they get to go back to work on some stuff for my place next:D
