what economical knives have 1095?

I'd go for a Sodbuster Jr in CV steel. Can't go wrong for $20-$25. If you have a few more dollars, you can opt for the better quality GEC #71 or the Queen Country Cousin.
 
I agree with Bob! I own one and it takes a wicked edge. The Sod Jr. is an excellent buy for a good user.
 
You might look at some Moore Maker seconds; well made knives & I believe they still use 1095. I have a couple and the cosmetic imperfections become irrelevant after the knife has been used a while.
