What EDC is easiest to take apart and clean?

The EKA Swede 92 (aka the Normark American Hunter)
is very easy to take apart. Just two screws with large heads that take a penny or dime in their slot to unscrew. Putting it together was a little tricky at first, but after doing it a few times it's easy. The Swede 92 isn't one hand opening so it may not be suitable for what you have in mind but it makes a great beater knife at around $30.00. Only a few internet stores seem to carry the knife, and I wonder why.

Two or three torx screws does it all,(Large model-3
screws,Medium & small-2 screws)and a low price too.
The large model has been discontiued, but
can still be found available on line.
 
I want to be able to clean the inside because it will often be used for cutting food.
It also looks like none of these knives have the Boye/Spyderco extra half-inch at the base of the blade that protects your finger in case of lock failure. Are there any mid-size Spydies that are easy (possible) to take apart?
