What equipment would you bring with you?

Great idea! I think you will have a great time, and I'm sure you both will learn something. From working with kids I can tell you that there might be a lot of "I'm bored" and "when does the fun start" sort of attitude. Happens all the time. The main thing there is to not get mad or discouraged. a few stories, or a change of activity might just do the trick to get him back in the game. Let him set the pace, and don't try to over-fill the time. kids travel through time differently than us older guys, and just getting a chance to spend time with Dad might be just the thing. I remember lots of canned stews over a fire with my Dad, and like you, he spent a lot of time at work. Another thought is to get too ambitious. Make it work, and make it a thing that you can do often. More closer, is better than fancier trips less often. I'm not a parent, and not trying to tell you how to do it, its just that I've got a pretty large sample size when it comes to the behavior of 11 year olds. also monitor his water intake, with a change of environment, he might not want to drink as much water as he should.

On the food, just try to make whatever is closest to his favorites. kids are more prone to troubles with their guts with massive diet changes, and he might not be that much of a picky eater, but favorite foods make for much better memories. Save the MREs for when the two of you tackle something tougher in a couple years. Even if its a bit heavy, or all you eat is ramen noodles, it will be worth it.
