This is the way I go about doing it. My way and another makers way will differ.
1 - Use a fresh 50grit 3M Regalloy ceramic belt to thin out the blade. You have to take care and NOT build up any heat so you don't alter the heat treatment.
2 - I then go up to a 120 Regalloy ceramic belt to remove all of the 50 grit scratches. Again, you need to watch the heat buildup.
3 - This is where I do things differently. I sand the blade on my disk sander starting with a 120 grit disk. Depending on how polished I want the blade, I will go up to 220, 320, or 400.
4 - I put a hand rubbed finish on all of my blades (with exception of beadblasted blades). Once done on the disk, I polish by hand to the desired level of finish. I might add that I can get pretty close to a mirror polish with a 400 grit disk, so a high grit hand rub doesn't take that long to do.
BTW, I FLAT GRIND all of my knives. The final thicknesses at the edge depend on what type of knife and what the intended use is for that knife. It will also depend on the hardness and toughness of the steel used to make that knife.
