Breakfast at home :Bob's Red Mill Steel Cut Oats
Couple fried eggs

On the trail: Home-meade GORP stuff. Almonds, rasins, sunflowerseeds, dried
pineapple ,peanut M+M's.

+1 on the steel cut oats. That and some morning protein has been a good experience for me. Couple of cups of coffee to get the blood and bowels going before departure leaves me with a little more spring in my step :)

For on the trail, I add extra almonds, dark chocolate, dried fruit, and whatever else I want into the cheap wally word mountain trail mix for on the go gorp.

I dont know if diabetics should consume many but one treat I especially enjoy are those oatmeal, peanut butter, chocolate no bake cookies. you can add some protein powder, nuts....

I've found some good recipes for Logan Bread online. Not quite so sugary with whole wheat flour, any kind of dried fruit nuts you like.

Corn bread pancakes; I've had 'em for breakfast and take the leftovers in ziplock-the more wholesome your corn bread mix the better they work.
