What is a good knife for hunting?

Some great suggestions here. One point I'd like to make is making and using different thickness blades, I'm leaning more heavily toward the thinner stock for hunting knives. 1/8" or 5/32" being the two I like. I'd take a look also at Knives of Alaska's knives. They have some great designs.

Bark River knives are awesome hunting knives.I think the Montana Guide would be about perfect if you want something to field dress game with.A drop point with a 3 1/2 inch blade is perfect IMHO.I'm drooling over the Montana Guide myself.
 
Had a cs master hunter, didn't like it. Felt the blade was too large and thick for dressing,skinning, quartering, pulling backstraps etc. Have had a spyderco moran drop point the last couple years, not really happy with it either, blade is the right size shape etc.. but the handle is too small, and no gaurd, have slipped up on it once. The vg 10 steel on the moran is the best steel I have used. Dressed and qaurtered two whitetails in a weekend last season, still felt razor sharp
Used a Kershaw hunting knife for many years, phenolic/brass handle that form fit your fingers. Really liked the feel of that knife but the steel was awful and would dull quick.
That rat 3 looks interesting, right size blade, good steel, small gaurd/finger choil. might be a winner
