What is a good steel to use for a large blade?

As this will be a show piece only, as you stated, use aluminum. It polishes great, and forms easily, and on display, no one will know.
 
Any time you have a big forum there will be folks incapable of reading a thread. Easy to skip past their meaningless posts. INFI is great steel, but it is proprietary, and not really relevant to this thread.

Anyways, I gather you are going to be building this knife yourself? If you are going to all that effort, why make it a non-functional item? You could use a quality carbon steel and make it a functional piece. If it is only on display, you can oil it up and it will not rust with some basic care. But then at least you would have the option of using it at some point. If you are truly set on stainless, and non-function, aluminum will do- Works for movie props.
 
I did not mean to imply that it would be non functional. Primarily for show, that's why I was thinking of using stainless. But the more I read and listen to this forum, makes me lean more toward 5160. 5160 appears, at this point, to be easier to find and work with, also lower in price. As you say, there are several things to do to keep it looking good.:)
