A hollow ground blade is one in which the cutting edge is formed by the intersection of two curves, one on each side of the blade. think about what the cross section of the blades looks like and forming the edge by grinding on a round grinding wheel. It can be a big wheel and a very shallow hollow grind or a smaller arc and a deeper curve. A flat grind of course is formed by the intersection of two flat planes. these things are never quite that literal in practice as there is usually a secondary bevel at the extreme edge that does the actual cutting.
