Going to have a custom utility made soon. I want a blade that can withstand some abuse, good edge holding still has some stain resistance since I live near saltwater. The makers offer any steel that can be bought from Alphaknifesupply and seems like Elmax and Z-Finit is a two great option.

I would like to hear how do they compare? edge retention, toughness, ease of sharpening and rust resistance?

Everything is a trade-off. I've used both steels and if you're main requirement is rust resistance, use Z-FiNit. If toughness and edge retention are the main priorities, use ELMAX.

Z-Finit is very tough while being nearly impervious to rust. May not be quite as tough as elmax (never used elmax), but it is an impressive steel. Any customers that have received customs in Z-Finit have loved them. If shooting for toughness with it, plan on 59HRC or 59-60HRC.
