I have heard of CruforgeV for a while now, but still have no idea what it is or anything about it... will someone help me out

It is a knife steel made by Crucible. The first Google results says:

CruForge V was developed specifically for forging into knives. Scott Devanna coordinated with knifemakers when developing the steel. The result is an excellent steel that forges and performs very well.

CruForge V is easy to forge but tougher to finish than any of the 10XX steels or 52100. The tradeoff is edgeholding. The vanadium in CruForge makes it hold an edge longer than the 10XX steels and 52100.

Crucible developed it specifically for forging knives, with input from knifemakers. Chemically it compares pretty closely with 52100 but with a bit of vanadium to form small, hard carbides for extra wear resistance.

It is also no longer made. From what I heard, the last big unrolled billet got bought by a company that makes horse hoof knives. Some folks were interested in trying it out for kitchen knife stock and I think that Aldo tried to run down that last big lump, but it was already gone. Some of the knifemaker suppliers still have some left in flat and round bar, but when that is gone, it is gone forever. Very nice stuff, but a PITA to hand sand. Takes a NASTY thin edge and holds it. I still have about 200 pounds of the stuff.
