I'm sure this question has been asked a million times. At my work we have all different kinds of metals and am hoping to possibly trade some work on a blade for material. I get all kinds of different steel and am wondering what types to save for making blades.

Chances are none of the metals you use are suitable. Of the tens of thousands of steel alloys only a few hundred if not few dozen are used for knives.

If you aren't making dies, ball bearings, bearing races, coil springs, high tension cable or cutting implements just get some 1084 from new Jersey steel baron

There is no way I could list all of what we have. Everything from titanium to some 3/16 and 1/2 4x8 plate of 4130. All kinds of stainless, Domex 100 armor plate, 1095 bar stock, all kinds of stuff.

This is like asking what woman is best looking... :D

S7 is great for toughness and still holds a decent edge in my opinion
You can't go wrong with CPM-10V for wear resistance/edge holding.
I really like AEBL for the combo of stainless, edge holding and toughness.
CPM-3V for a tough thin edge
Carbidized Ti just keeps on cutting... probably my favorite.

How are you going to make your knives (stock removal or forging), what are they going to be used for, and how will you heat treat them?

Tell us what you have

That is like asking what is good to eat at a restaurant when we do not know what is on the menu.

Go to alpha knife supply and new jersey steel baron and compare what they have with what you have

You mentioned 1095. It's a good blade steel if you have the ability to control heat treat temp, and have the right quench medium. Generally steels that fall in the spring steel category or tool steel category make good blades.
