What is the blade angle that a guillotine is sharpened to, and how often resharpened?

watched a rookie at the slaughterhouse make an ultimate mistake with a bolt gun.
he grabbed a down/crippled hog by an ear and went to bolt it in the forehead.........hog moved and he drove it into his kneecap and knee joint to the hilt.
sounded like a wounded hog by the time he was stretchered out!!!!!
