What is the most interesting thing to cut olfactorily, in your opinion?

My answer was also going to be “the cheese”, because when it’s teed right up for you, as in this thread, you just have to take a swing.
 
Yup, fancy cheese and sausage and a bottle of wine, corkscrew for that of course, like we see in knife videos from Stefan Schmalhaus. Wait, cutting up bread for rhe cheese and meats!!
 
Ever accidentally cut open a deer’s guts when field dressing one? It is “interesting”, that’s for sure!
