What is the most interesting thing to cut visually, in your opinion?

I was cutting some vegetables today and I noticed that some are more exciting to cut than others. For example, cut a bundle of green onions and they jump all over the place. Cut a yellow onion properly and it is a geometric puzzle that is visually interesting to see break down. Cut a carrot and see how strong the root vegetable is and the sound it makes. Would love to hear your opinions.

I gotta agree that a properly diced onion is pretty satisfying. Speed chopping a stalk of celery or 2 is pretty fun as is seeing how thinly you can cut tomatoes or grapes.
