I think my most recent favorite would be the Expendables when Jason Statham and Mickey Rourke throw their knives at a wall hanging. Statham with his switchblade and Rourke with his Espada XL. The Espada looked good sticking out of the wall.

In The Punisher when he flips open his balisong and stabs the Russian dude in the shoulder. Mostly because you just don't see bali's in movies to much. Another one is in Expendables 2 when Statham is in that big robe and wipes out everyone in the room with his kunai knives.

I like in The Mummy when Brendan Fraser uses a balisong to take out a scarab beetle

Id have to say the part in predator where he throws his SOG style Bowie and spears a guy. Then comes up and says "stick around" and leaves the guy pinned to the wall. You can totally tell the handle that's sticking out of him is a cheap plastic Halloween prop. Cheesy but hilarious.

I say in "Parker" Jason Statham sticks his hand through a sst full serrated endura that he also was stabbed in the chest with.

The Outsiders, many great knife scenes, but my favourite is when Emilio Estevez smashes his beer bottle then whips out his balisong.

The finale of The Man From Nowhere. The protagonist brutally dispatches 5 of the main villain's thugs using some sort of fixed blade, before engaging in a 1 on 1 knife duel with the villain's lead bodyguard/enforcer, who is armed with a Cold Steel Steel Tiger karambit. Video starts with gunplay, devolves to hand to hand and knives at around the 1 minute mark. Word of warning, video is rated R:

The "hallway fight" in The Raid, where the protagonist fights his way down a hallway dispatching a bunch of thugs using his knife, nightstick, knees, elbows, and feet. This video is also R rated:

A classic scene, buddy. I'm still chuckling.

I just like it when I recognize a name brand knife in a movie or TV show.
In a couple episodes of Dexter I saw a Kershaw Boa and a Spyderco Endura.

Hitman in the subway scene where Timothy Olyphant drops the pistols and draws two short ninjatos from under his suit
